I think the most clever part of these recipes is how, when fused together, seemingly odd pairs like chocolate and zucchini, or coconut milk and quinoa, form tastes that are both familiar and new. All completely delicious. I especially love the mac’n cheese, which I’ve also tried with frozen spinach — very good, filling, and versatile. It reminds me a little of a parmesan risotto. I tried quite a few recipes last week, and those were definitely my top three.
What do you think about a sauce made of tofu? Are you tempted to try any of those recipes? 😉
