Okay, not a very exciting one, but it’s still a food processor! Now I don’t have to make my blender do its best interpretation of “chopping!” Here it is, the little cutie.
In honor of this awesome purchase, I decided to try my hand at a nut pate, and then changed my mind and instead whirled together a hand full of cashew nuts and a couple medjool dates. The result? Deliciousness. I never knew medjool dates were so sweet!
I think I’m going to try it spread over toast as a post-workout snack tomorrow morning. It’s really good.
I did a lot of food shopping today. Lots and lots. Some of my super cool purchases are as follows:
Omigosh. I’ve only been looking for this for my whole life. Okay, maybe that’s an exaggeration, but literally my favorite cuisine is Ethiopian, and the berbere spice is a toughy to find, so I kind of squeaked when I saw this in the aisle at WF today. I think I will try it in a tomato sauce base with chickpeas. That ought to be delicious.
I’ve been looking for a way to add good protein to my smoothies, and Diana mentioned that she likes hemp protein in hers, so I figured I’d give it a try. I don’t want to use any more soy protein, because I think I may have a slight allergy to it. Hurts my tummy JUST a little. Not enough to give up the occasional tofu salad or scramble, but hey.
I bought tons and tons of kale and actually washed, chopped, and baggied it right away, which is so unlike me. I see green in the future! Somehow we have to eat it all before Friday night. Should be doable, no? Sure.
Tonight for eats, I made yummy enchiladas courtesy of eat drink & be vegan. I would also like to note that tonight, HTB ate a meal with absolutely NO meat in it. Not one morsel. I just asked him, “Would you say that you enjoyed your dinner AND it filled you up?” He said, “Mhhmm” and “Mhmm” — score for me!
These were freakin’ delicious. I would never imagine using mashed avocados and cashews as part of an enchilada filling, but it was sooo good. Very satisfying comfort food.
I gotta tell ya, I’ve been loving my time off from school. I just realized that exactly one week from now I will be sitting in my first class of my last semester. So that’s both exciting and sad, because I will not be able to spend all day reading blogs, trying out recipes, and handing all my money over to Whole Foods. C’est la Vie.
Tomorrow I will be hitting the gym really hard because I missed today, and also because I think I’ve been consuming too many nut products lately. I think that if my mission were to maintain my current weight, it’d be fine, but the fact is, I’m trying to reduce, so I do need to watch it with those. They are sooo good though. 😦 I’m going to Google and see how much fat is recommended per day when you’re on a reduction eating plan. EDIT – So, according to Ehow.com, when on a weight loss plan you should “Keep total fat intake between 20 and 35 percent of calories.” A serving (2 tbsp) of almond butter is about 190 calories, 150 of those calories come from fat. So, if I’m sticking to a diet of around 1200 ish calories per day, about 360 calories of those should be from fat. Which means that 2 and a half servings of nut butter would do me in. So, with that in mind, see me reaching a LITTLE less often for the jar of almond butter… 🙂
