I’m starting my post with dessert because it was super good. I don’t know if I mentioned here already, but I found a really delicious coffee creamer made from coconut milk made by so delicious. The same company also makes a very good yogurt made from coconut as well and I tried the vanilla tonight:
With some vegan chocolate chips, of course. The stats on the yogurt are 140 calories, 6 grams fat, 2 grams fiber, and 1 protein, 6 active & live cultures + the goodness that is coconut!
Today I went for a run outside and it was cold and disgusting and it was the worst run ever. My legs felt like lead, the sidewalk was still covered in slush (where I live, you can’t tell until you’re actually there) and for some weird reason school let out at 10:30am, so there were swarms of smoking teenagers everywhere. By the way, since when do little kids smoke!? How do they buy the ciggies?! Am I that old? Anyway, back to the run, it was yuck, but I endured and came home and grumped about it for a while and then made myself a smoothie to refuel. Instead of making my usual green goddess of spirulina, I decided to try out my new Hemp protein and add in actual fruits. I blended: spirulina, hemp protein, almond milk, 1 kiwi, and half an asian pear. It was pretty good! The hemp protein isn’t exactly smooth but it was nothing like the kale smoothie I made that required heavy chewing. Pretty good. And it made me feel better.
For lunch, I upped the veggieness:
Pretty right? Beets, avocado, carrots and mixed greens. I also added some chopped mushies later, but that picture didn’t look as vivid. Is it a fact that putting avocados in paper bags makes them ripen faster? I don’t know why I think that, but I guess it works?
Today marks two weeks of vegan eating, and YES I am still loving it. I feel good, I look better (i.e. fitting into actual pants with zippers and buttons) and am excited to see what I feel/look like for my 1 month mark. A lot of my friends/family are starting weightloss programs right now to get into shape for my wedding, so assuming all goes well, we should be a hottie bunch in April!
I know it’s only Wednesday, but it kind of feels really close to the weekend. Anyone have exciting plans?
