I have been starving today. Ravenous even. I just want to crunch-crunch-crunch on everything. Which usually means that it’s rollin’ up on that time of the month. Yay! Just in time for my trip to Florida! Today I started with a delicious and nutritious green goddess — surprise, surprise, right? I also had a piece of sprouted 7 grain toast with the last of my cashew-date concoction.
I find that I’m getting used to the texture of the hemp. I also like how it fills me up for a couple of hours with good energy. I ran some wedding errands this morning and hit the gym (legs are tired from my double workout tomorrow…) and then came home to knosh. I had leftover enchiladas and some blue corn tortilla chips.
For tonight I tried out yet another amazing recipe from eat drink & be vegan, the amazingly easy, one pot sensation, chickpea and quinoa casserole. I served that with a side salad for me and with some grilled tilapia for HTB.
I also had a most delicious kombucha tea (grape flavored) in a lovely flute.
Then we watched White Out and it was exactly as the title says. I wish I had two hours back of my evening. Oh well.
Tomorrow we fly to Orlando and I am much excited to have a break from this cold Boston weather. We have a pretty jam-packed schedule while we’re there, but it should all be wonderful fun. Not sure if I’ll have time to update the bloggy, but I will of course be taking pictures of everything foodish, which will make for a SUPER big post on Monday. Speaking of awesome, my friend Scott basically saved my vegan-eating little bootay. How? I’ll tell you. It turns out that we don’t land in Orlando until around 10PM, and we have to be somewhere at 9AM the next morning. That means I would not have any time to go Whole Foods shopping! So Scott, amazing friend that he is, volunteered to shop FOR me and meet us at our condo Friday night. And get this — I didn’t even ASK him to. He just knew. Sigh. 🙂
So I have to sit down tonight and really think long and hard about what I’m bringing with me and what I really need for the weekend. Hmmmmm.
Oh, and in exciting news…
Those, my friends, are grab-n-go VEGAN INDIAN delights from Sukhi. HTB met Sukhi at his San Francisco conference (yes, he works in food!) and basically died over her tofu paneer, which is highly amazing coming from him. I quickly went and checked her offerings and saw that she has a pretty good selection of vegan offerings, some of which are ready to eat, which is a really awesome convenience, especially when traveling. Well! Ms. Sukhi has offered to let me be one of her “testers” and she’s sending a bundle of goodies my way next week to try and share my opinions on! Wooohooo!!! Can’t wait.
