I apologize for the post title, I just couldn’t help myself!
Today I tried my hand at making a somewhat raw recipe! And I have to say, it was PRETTY darn tasty. Because I see it’s such a popular food on the bloggies, I decided to attempt the making of some zucchini. Because I don’t yet have a spiraler (but I will one day!) I just peeled mine with a normal carrot peeler. This worked very well and wasn’t at all as tedious as I imagined. Here’s the pic and the recipe:
RAW FETTUCCINE WITH SPICY “VODKA” SAUCE
1 can (about 15 oz) organic garbanzo beans
1 can organic diced tomatoes with chilis (or without, if you prefer)
1 tsp Berbere seasoning (or: ½ tsp red chili flakes, dash of cinnamon, ½ tsp cumin)
Salt and pepper to taste
1 normal size zucchini
In a medium saucepan, combine tomatoes, garbanzo beans, and seasoning. Bring to medium heat. Meanwhile, peel your zucchini into thin fettucine-like ribbons. Once the tomato/bean mixture is thoroughly heated (I cooked it for 8 minutes to really let the spices absorb into the tomatoes, but if you’d like to make this more “raw”you don’t even have to heat it up at all.) Transfer to blender and process until it’s your desired sauce consistency. Mine ended up being a nice hearty sauce. Spoon atop “noodles” and eat!
Now, I’m not sure if canned ingredients really qualify for raw eating, but that’s why I said somewhat raw. It was super delicious though, nice and spicy. I put it on top of HTB’s tilapia this evening and that was a hit too.
What are your favorite “raw noodle” recipes? I feel kind of addicted all of a sudden! Good thing I have a drawer full of zucchini! Tomorrow I think I will try an alfredo sauce with coconut milk and nutritional yeast. Stay tuned!
