green transfusion

Good morning!

Why The Hulk? Well, this puppy is simply greener than grass. I woke up this morning feeling SO tired, and I have no idea why, unless it’s this weekend’s exploits catching up with me. I just feel sluggish, and barely crawled out of bed. I felt like I needed an energy transfusion, so that’s just what I made. I basically loaded up the blender with as much baby spinach as it would hold. I’d guess probably double the amount I normally use for a smoothie that HTB and I both drink! My blender sputtered and puttered but eventually broke it down. Then I added ground flax, raw cacao, spirulina, and hemp protein (a sample of Nutiva). Normally I can’t even taste the spinach in a green monster goddess, but The Hulk was powerful! Hopefully it will boost me up. I’m kinda feeling like today will be a several smoothie day. That will keep me both raw and nutritionally revved.

* About the Nutiva hemp protein. I think it’s good. It actually incorporated completely into my smoothie, no graininess. In fact, I couldn’t taste it at all — but remember, I literally had a ton of spinny in there. I think I’d try it again though. I liked it!

Last night I tried my hand at spaghetti squash for the first time since High School. I think I probably undercooked it because I just didn’t have any patience. It was really delicious anyway though, very comforting and reminiscent of the days when I would load up some angel hair with pasta sauce and cheddar cheese and just go to town. Sigh.

Simple squash with more “Hide the Lentils” Tomato sauce (ED&BV) topped with CHEEZY sauce! I added smoked paprika and onion powder into my sauce. Twas delicious.

I also created a dinner for HTB that I like to call a Fridge Cleaner. Basically, I peeked inside the fridge and looked at all the leftover stuff I had… and whipped up something for him to eat! It actually turned out delicious he says. I know he loves fried rice, so I attempted to make a healthy version. I had some leftover quinoa, some broccoli, cabbage, a salmon burger… So I tossed all of that into a fry pan with some garlic and sesame oil. Fried an egg into it, added red chili flakes and soy sauce, and — Voila!

Do you guys ever make Fridge Cleaners? Do they ever end up turning into meals you want to re-create? I think this one might be, because it really hit HTB’s fried rice spot!

Well, it’s a bit past 8:30am and it’s time for me to decide what to do with my life. Yet again, it is snowing, a lot, and I am loathe to venture outside. I do have school later. Luckily I went with HTB to work yesterday, and while he did stuff in his office, I sat at his assistant’s desk and cranked out a paper or two. That frees me up for today quite a bit. In fact, on my school list? Read Wuthering Heights! That’s not work at all! So I’m considering curling up in the big chair with the puppies and digging in — however, I’m fully away that if I don’t hit the gym first thing, I’ll likely keep putting it off till it’s too late. There’s a Beginner Zumba class at 9:30am, which is a possibility. Sigh. I guess we’ll see.

    Well, did the green monster raise the energy count? Rumor has it that you did in fact make the Zumba class so I’m guessing that either the monster raised the energy level or you just fought through the sluggishness to do what you know needed to be done.

    For those who might be wondering, the Fridge Cleaner was good. I actually wanted another plate.

    Ha, I love the name “The Hulk.” Very appropriate! 🙂

    I love spaghetti squash! Yum yum. I just got the book EDBV, so I’ll have to try that sauce soon!

    I LOVE spaghetti squash. I wish I had some at home! I’ll have to buy one on my next grocery trip!
