I’m not sure what that title means. It just happened. Sorry.
And really, is it only Tuesday? Jeez this week is draggin’ along!
This morning the sun was shining, and I decided to take advantage of that while it lasted, so I took the pupperonis to Derby Street (a snotty outdoor shopping mall near my house) for an early morning preamble. We ran into our neighbor there, so we had a lovely walk and chat, and the poochies have been sleeping soundly ever since. I feel like a good mommy, for once. 🙂
In preparation for my MUCH anticipated Pure Market Express delivery tomorrow (YAY!!!!) I’ve been loading up on veggies like they’re going out of style. Which they’re not, of course. Yesterday I made a quickie roasted zuke tomato sauce:
I tossed it with some organic tomato sauce, garlic, onions, and the rest of my caramelized fennel from the other day, and poured it over a bed of delicious spaghetti squash!
Last night was HTB’s first taste of spaghetti squash, and he said he really liked it! He doesn’t like to eat a lot of carbs at dinner, so it’s the perfect alternative. I added some salmon to his as well. Here are our dinners, side by side. Forgive the sloppy plating 🙂
This morning was another avocado in my green goddess!
I’m clearly in love with this combo. It makes me feel so good!
For lunch, I had more spaghetti squash, along with a little kale, chopped avo and Goddess dressing. Mmm.
Delicious. I’ve got one yam and lots of spinach left for produce, so tonight will probably be a baked ‘tater and more spaghetti squash. Also been loading up on the lemon water, which is making me feel great. What a remarkable change from last week!
I’m am soooo excited for my Pure Market delivery tomorrow. I just can’t wait to dig in! I also picked up Natalie Rose’s The Raw Food Detox Diet, upon the suggestion of Megan (Thank you!) and I’m already enjoying it. Kind of funny though, because a lot of the things she talks about in here directly contradict the “weight loss rules” I’ve been drilling into my head for the past fifteen years. More on that later.
Have a great one!
